  • 1 white onion, diced
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 2 apples, chopped
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 (15 oz) cans cannellini beans, drained
  • 2 cups shredded Mexican blend cheese
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven over medium heat, sauté the olive oil with chopped apples and diced onion until softened (6-8 minutes). Stir in chili powder and cumin before transferring to a plate.
  2. Lower heat to medium-low, melt butter in the pot. Whisk in flour for about 60 seconds.
  3. Gradually add chicken broth while whisking continuously until smooth. Incorporate half & half until thickened (3-5 minutes).
  4. Add chopped rotisserie chicken and drained beans along with the apple-onion mixture; mix well.
  5. Adjust thickness with additional broth if needed. Stir in shredded cheese until melted.
  6. Serve hot topped with your choice of garnishes like green onions or tortilla strips.
