  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between kitchen towels for 15 minutes to remove excess moisture. Cut into 1-inch cubes and coat with cornstarch.
  2. Heat oil in a skillet over medium-high heat. Add tofu in a single layer and cook without moving for 3-4 minutes until golden brown. Flip and cook for another 3 minutes until crispy. Remove from the pan.
  3. In the same skillet, add sliced peppers and onion, cooking until they start to caramelize (about 5 minutes). Stir in minced garlic and ginger for 30 seconds.
  4. Add pineapple chunks and caramelize for another 2-3 minutes. Mix soy sauce, rice vinegar, and maple syrup in a bowl, then pour over the mixture in the skillet. Return crispy tofu to the pan and stir gently until everything is coated and glossy.
