  • 1 can black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • 1 cup shredded lettuce
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • ½ cup salsa
  • Sour cream (optional)
  • Fresh cilantro (optional)
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground meat and cook until browned.
  3. Stir in taco seasoning as per package instructions.
  4. Cook rice or quinoa according to package directions if not done yet.
  5. Warm black beans in a small pot over low heat.
  6. Chop cherry tomatoes, avocado, and lettuce for toppings.
  7. In each bowl, layer rice/quinoa base followed by seasoned meat, black beans, corn, tomatoes, and avocado.
