  • 2 tablespoons sugar
  • 1 cup unsalted butter, cold
  • 1/4 cup ice water
  • 1/4 cup lemon juice, cold
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter, softened
  • 1 cup dark brown sugar, packed
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk
  • whipped cream

Instructions

  1. Prepare sweet potatoes by peeling and boiling until tender; then mash.
  2. Make the pie crust by combining flour, salt, sugar; cut in butter; add ice water and lemon juice.
  3. Chill dough for 30 minutes before rolling out to fit pie dish.
  4. Preheat oven to 350°F (175°C). Mix mashed sweet potatoes with softened butter and remaining filling ingredients until smooth.
  5. Assemble pie by pouring filling into crust and baking for about 90 minutes or until set.
  6. Allow to cool before serving topped with whipped cream.
