  • 2 slices halloumi cheese
  • 1/2 avocado, sliced
  • 1/2 cup mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tomato, halved
  • 1 tbsp olive oil
  • Salt, pepper, and chili flakes to taste

Instructions

  1. Heat olive oil in a non-stick frying pan over medium heat. Crack in the eggs and fry sunny-side up until the whites are set and yolks remain runny. Season with salt and chili flakes.
  2. In another pan over medium-high heat, sauté sliced mushrooms in olive oil until golden brown (5-7 minutes). Season with salt and pepper.
  3. Add fresh spinach to the mushroom pan and sauté until wilted (1-2 minutes).
  4. On a hot grill pan or dry skillet, grill haloumi slices and halved tomatoes cut side down for about 2-3 minutes per side until golden brown.
  5. Plate the sunny-side-up eggs alongside sautéed veggies; add avocado slices and grilled tomato halves next to charred halloumi.
