  • 2 cups cooked corn kernels
  • 1 red bell pepper, diced

  • 1 jalapeno pepper, seeded and minced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and cool slightly.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  3. In a large bowl, combine the cooled pasta with corn, bell pepper, onion, and jalapeno. Pour the dressing over the mixture and toss gently to coat.
