  • 1 cup (2 sticks) unsalted butter, room temp
  • 2 cups granulated sugar
  • 4 large eggs, room temp
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup sour cream
  • 1 ½ cups fresh strawberries, chopped
  • 1 tbsp flour, to toss with strawberries
  • 1 cup powdered sugar, sifted
  • 23 tbsp pureed strawberries
  • 1 tsp vanilla extract
  • A drop of pink food coloring (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease and flour a 9×5 loaf pan or bundt pan.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients, alternating with sour cream.
  5. Toss chopped strawberries in flour and gently fold them into the batter.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 60-70 minutes or until a toothpick inserted comes out mostly clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
  8. For the Strawberry Glaze: Puree fresh strawberries until smooth. Mix powdered sugar with 2 tablespoons of puree and vanilla until desired consistency is reached.
