  • 4 salmon fillets (or 1 lb chicken or turkey, cut into cubes)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp soy sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp chopped green onions
  • 1 tbsp chopped cilantro
  • 1 tsp sesame seeds

Instructions

  1. In a mixing bowl, whisk together sriracha sauce, honey, soy sauce, minced garlic, lime juice, and sesame oil for the marinade.
  2. Cut the salmon (or chicken/turkey) into cubes or leave fillets whole, coat with half the marinade, and let sit for 15 minutes.
  3. Preheat oven to 400°F (200°C). Toss cauliflower with olive oil, salt, and pepper; roast for 20-25 minutes until golden.
  4. Heat a skillet over medium-high heat; sear salmon pieces (or chicken/turkey) for about 2-3 minutes on each side until caramelized.
  5. Pour reserved marinade over cooked salmon; allow to bubble for 1-2 minutes for a thick glaze.
  6. Assemble bowls with cooked rice, roasted cauliflower, and glazed salmon.
  7. Garnish with green onions, cilantro, and sesame seeds.
