  • 2 chicken breasts
  • 1 head green leaf lettuce (chopped)
  • 2 avocados (sliced)
  • 2 tomatoes (diced)
  • 1 can black beans (drained and rinsed)
  • 1 red bell pepper (sliced)
  • 1 cup corn
  • ½ red onion (sliced)
  • ½ cup ranch dressing
  • Hot sauce (to taste)
  • 1 lime (juiced and zested)
  • 1 tsp garlic powder
  • ½ tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • 2 tbsp honey
  • 1 tbsp avocado oil

Instructions

  1. Marinate the chicken in a mixture of lime juice, garlic powder, cumin, chili powder, honey, and avocado oil for at least 8 hours.
  2. Grill the marinated chicken on medium heat for about 10–12 minutes until cooked through. Let it cool and slice into strips.
  3. In a bowl, mix ranch dressing with hot sauce; set aside.
  4. Layer chopped lettuce in a serving bowl and top with grilled chicken, diced tomatoes, black beans, sliced bell pepper, avocado slices, corn, sliced red onion, tortilla strips, cilantro and drizzle with spicy ranch dressing.
