  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef broth
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat oil in a heavy-bottomed pot over medium heat; sauté onions until golden brown (5-7 minutes).
  2. Add minced garlic and ginger; cook for another 1-2 minutes.
  3. Stir in spices and toast for 30 seconds.
  4. Add lamb cubes; brown on all sides (5-10 minutes).
  5. Mix in tomato paste and crushed tomatoes; pour in broth and coconut milk.
  6. Bring to a boil, then reduce heat to low; cover and simmer for at least 1 hour until lamb is tender.
