  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce (from canned chipotles in adobo)
  • ½ tsp lime juice

Instructions

  1. Pound chicken breasts to an even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat grill to medium-high heat and cook chicken for about 4–5 minutes per side until reaching an internal temperature of 165°F (74°C). Add cheese in the last minute to melt.
  3. Mix mayonnaise with adobo sauce and lime juice in a bowl.
  4. Toast brioche buns until golden brown.
  5. Assemble by spreading chipotle mayo on each half of the bun; layer with avocado, grilled chicken, turkey bacon, and any extra toppings.
