  • 2 eggs
  • 1 cup cherry tomatoes or 1 roma tomato, chopped
  • 2 tbsp grated manchego cheese
  • Avocado, sliced
  • 1 tsp olive oil (for frying)
  • 1 tsp chili oil
  • 1 tsp everything bagel seasoning
  • 1 tsp Tajn seasoning (or chili-lime spice)
  • 1 tsp sriracha

Instructions

  1. In a non-stick frying pan over medium heat, brown the ground beef until fully cooked. Add chopped tomatoes and sauté until softened. Stir in grated manchego cheese, season with salt and pepper, then remove from heat.
  2. In another pan, heat olive oil over medium heat. Crack in the eggs gently and cook sunny-side up or over-easy to your preference. Drizzle with chili oil and sprinkle with everything bagel seasoning.
