  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tsp salt, or to taste
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 tbsp tomato paste

Instructions

  1. Prepare all ingredients by washing and chopping vegetables and cubing the beef.
  2. In a large skillet over medium heat, heat vegetable oil. Sauté onions until translucent (about 5 minutes), then add minced garlic and grated ginger; cook for an additional minute.
  3. Stir in curry powder, ground cumin, turmeric, chili powder, and salt; cook for about 2 minutes until fragrant.
  4. Transfer mixture to the slow cooker and add beef, coconut milk, beef broth, and tomato paste. Stir to combine.
  5. Cover and slow cook on low for 6–8 hours or high for 3–4 hours until beef is tender.
  6. While cooking, prepare naan as per package instructions or your homemade recipe. Brush with garlic-infused butter or olive oil before toasting.
