  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the onion and mincing the garlic and ginger.
  2. In a skillet, heat coconut oil over medium heat. Sauté onion until translucent, then add garlic and ginger until fragrant.
  3. Transfer to a slow cooker and mix in beef cubes, curry powder, diced tomatoes, coconut milk, salt, and pepper.
  4. Cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
  5. Cook rice according to package instructions and prepare crispy fries by baking or frying potato strips until golden brown.
  6. Serve hot over rice with crispy fries on the side.
