  • 1.5 cups cooked corn kernels
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • Chili powder, smoked paprika, salt
  • Fresh lime and cilantro for garnish

Instructions

  1. Prepare all ingredients by chopping onion, mincing garlic, and crumbling feta cheese.
  2. Heat olive oil and butter in a large skillet over medium heat. Sauté onion until translucent, then add garlic.
  3. Add shrimp seasoned with chili powder and salt; cook until pink and opaque. Remove from skillet.
  4. In the same skillet, stir in corn and smoked paprika, then add half-and-half; simmer until thickened.
  5. Return shrimp to the skillet, combine well with sauce, adding half of the feta.
