  • 900g flank steak, cubed
  • 120ml creamy peanut butter
  • 80ml tamari or soy sauce
  • 80ml sweet Thai chili sauce
  • 2 ½ tablespoons Thai red curry paste
  • 6 cloves garlic, finely chopped
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon toasted sesame oil

Instructions

  1. Prepare the marinade by blending peanut butter, tamari/soy sauce, Thai red curry paste, pickled ginger, and sesame oil until smooth.
  2. In a medium bowl, whisk together sweet Thai chili sauce, tamari/soy sauce, garlic, grated ginger, and chili paste. Add cubed beef to marinade and toss to coat. Let it marinate for at least 10 minutes.
  3. Thread marinated beef cubes onto skewers with small spaces in between for even cooking.
  4. Preheat your grill or grill pan to medium-high heat. Grill skewers for 8-12 minutes, turning occasionally until lightly charred and cooked to desired doneness.
  5. Serve over steamed rice or coconut rice with lime wedges, sliced avocado, sesame seeds, and fresh cilantro.
