  • 1 cup grated Parmesan cheese
  • 1 Tbsp cornstarch
  • 2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 cup fresh cilantro (minced)

Instructions

  1. Preheat your oven to 400°F and line baking sheets with parchment paper.
  2. Slice the washed potatoes into wedges (8 per potato).
  3. In a mixing bowl, combine potato wedges, vegetable oil, garlic, Parmesan, cornstarch, black pepper, salt, onion powder, paprika, chili powder, and cilantro. Mix well using your hands.
  4. Spread wedges evenly on baking sheets with skin side down.
  5. Bake for 15 minutes at 400°F, then lower the temperature to 375°F and continue baking for an additional 40 minutes until golden brown and crispy.
