  • 1 salmon fillet
  • Lemon slices
  • 45 asparagus spears
  • 68 cherry tomatoes
  • 1 cup cauliflower rice (fresh or frozen)
  • 1 cup diced carrots and celery
  • 1 tbsp olive oil
  • Salt & black pepper

Instructions

  1. Season the salmon with salt and pepper. In a non-stick skillet, heat olive oil over medium-high heat and sear the salmon skin-side down for about 4 minutes. Flip and cook for another 4 minutes until crispy.
  2. On a baking tray, arrange asparagus and cherry tomatoes. Drizzle with olive oil and sprinkle with salt. Roast in the oven until slightly blistered.
  3. In a separate skillet, sauté cauliflower rice with diced carrots and celery until tender. Season to taste.
  4. Char lemon slices on the grill or in the pan until caramelized.
  5. Plate the salmon alongside roasted veggies and cauliflower rice, garnishing with charred lemon.
