  • 2 soft-boiled eggs
  • 1 kiwi, peeled and sliced
  • 1 tomato, sliced
  • 1 cup cauliflower florets, finely chopped
  • 23 tbsp feta cheese, cubed
  • 1 tbsp black olives
  • Small bunch fresh parsley
  • Pinch of chili flakes (optional)
  • Pinch of black sesame seeds (for garnish)
  • Salt & pepper, to taste

Instructions

  1. Boil the eggs: Bring water to a boil in a saucepan. Gently add eggs and cook for 7 minutes for jammy yolks. Cool under cold water before peeling and slicing in half.
  2. Prepare the veggies & fruit: Slice kiwi and tomato evenly; finely chop cauliflower florets.
  3. Assemble the plate: On a serving plate, artfully arrange kiwi slices, tomato slices, chopped cauliflower, parsley sprigs, feta cubes, olives, and the halved soft-boiled eggs.
  4. Season & garnish: Sprinkle chili flakes over eggs if desired. Garnish feta with black sesame seeds and season with salt and pepper to taste.
