  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1.5 tsp pumpkin pie spice
  • 24 ladyfinger cookies
  • 3/4 cup strong brewed coffee (cooled)
  • 1 tbsp cocoa powder or cinnamon (for dusting)

Instructions

  1. Brew strong coffee or espresso and cool it down. Mix with alcohol-free vanilla extract if desired.
  2. In a large bowl, combine pumpkin puree, mascarpone cheese, sugar, vanilla extract, and pumpkin pie spice. Mix until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form. Fold into the pumpkin mixture gently.
  4. Dip each ladyfinger into the cooled coffee briefly and layer half in a baking dish.
  5. Spread half of the pumpkin filling over the ladyfingers and repeat layers.
  6. Cover and refrigerate for at least 6 hours or overnight.
  7. Before serving, dust with cocoa powder or cinnamon.
