  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract
  • whipped cream for serving (optional)

Instructions

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.
  2. In one bowl, mix flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until creamy; add sugars, egg yolk, and vanilla extract.
  3. Gradually combine dry ingredients into the wet mix until just combined.
  4. Shape dough into 2-inch balls, roll in coarse sugar, and place on the prepared cookie sheet.
  5. Whisk together filling ingredients in a separate bowl.
  6. Make an indentation in each cookie ball and fill it with the pumpkin mixture.
