  • 200g lean ground beef or turkey
  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Optional: 2 hard-boiled eggs, halved

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 20-25 minutes until tender and golden.
  2. In a skillet over medium heat, add olive oil and cook ground beef or turkey until browned. Stir in tomato paste, cumin, smoked paprika, salt, and pepper. Simmer for 2-3 minutes.
  3. Assemble your bowl by layering cooked meat at the bottom, followed by roasted sweet potatoes and sliced avocado. Top with halved hard-boiled eggs if desired.
