  • 1.5 cups pumpkin puree
  • 1 sweet onion, diced
  • 2 cloves garlic, minced
  • 1 shallot, diced
  • ½ tablespoon fresh thyme, chopped
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • ½ cup freshly grated parmesan cheese
  • 2 cups freshly grated havarti cheese
  • 1 cup arugula
  • Extra virgin olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and place a pizza stone inside if available.
  2. In a skillet over medium-low heat, caramelize half of the diced onion with olive oil and sugar until translucent.
  3. In a mixing bowl, combine pumpkin puree, garlic, shallot, thyme, remaining onions, and parmesan cheese. Season with salt and pepper.
  4. Shape the pizza dough into a circle and transfer it to the heated pizza stone.
  5. Spread the pumpkin mixture evenly over the dough and top with caramelized onions, arugula, and grated havarti cheese.
  6. Bake for 10-12 minutes for a soft crust or 20-25 minutes for crispy edges.
  7. Once baked, slice and serve warm.
