  • 1/2 cup (68g) cornstarch
  • 1/4 tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (68g) powdered sugar
  • 1/2 tsp peppermint extract
  • 2 Tbsp (28g) salted butter, softened
  • 2 Tbsp half-and-half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups (200g) powdered sugar
  • 1/4 cup (42g) finely crushed peppermint bits or candy canes

Instructions

  1. Whisk together flour, cornstarch, and salt in a bowl; set aside.
  2. In a stand mixer, cream unsalted butter and powdered sugar until fluffy.
  3. Mix in peppermint extract; gradually add dry ingredients until just combined.
  4. Chill dough for one hour in the refrigerator.
  5. Preheat oven to 350°F (175°C). Shape tablespoon-sized balls of dough and place on ungreased baking sheets.
  6. Bake for 10–13 minutes until lightly golden; cool on wire racks.
  7. Prepare frosting by creaming salted butter, half-and-half, peppermint extract, and powdered sugar until fluffy.
  8. Frost cooled cookies and sprinkle with crushed peppermint.
