  • ½ cup granulated sugar (for topping)
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter (cubed)
  • ¼ cup boiling water
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 375°F.
  2. In a mixing bowl, combine sliced peaches, sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Let sit for 10 minutes.
  3. In another bowl, mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Stir in boiling water until combined.
  4. Pour peach mixture into a greased baking dish and dollop biscuit topping over it.
