  • 1/2 cup Shredded Coconut (Unsweetened)
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 1/3 cup Maple Syrup
  • 1 3/4 cup Almond Milk
  • 1/4 cup Dairy-Free Greek Yogurt
  • 1 Flaxseed Egg
  • 1 tablespoon Chia Seeds
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Melted Coconut Oil
  • 2 1/2 cups Diced Peaches (fresh or canned and drained)

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an 8-inch x 8-inch baking dish with oil.
  2. Prepare a flax egg by mixing one tablespoon of flax meal with three tablespoons of lukewarm water and let it sit for about 10 minutes.
  3. In a mixing bowl, whisk together the flax egg, almond milk, maple syrup, yogurt, melted coconut oil, and vanilla until combined.
  4. In another bowl, mix oats, shredded coconut, cinnamon, salt, and chia seeds.
  5. Combine wet and dry ingredients before folding in the diced peaches.
  6. Pour the mixture into the baking dish and bake for about 35-60 minutes until set and golden brown.
