  • 8 oz crumbled feta cheese
  • 1 cup ricotta cheese
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. In a bowl, mix together the crumbled feta, ricotta, and thyme until smooth.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Cut the phyllo sheets in half lengthwise. Brush one strip lightly with melted butter or olive oil.
  4. Place about 1 tablespoon of the cheese filling at one end of the phyllo strip, fold in the sides, and roll tightly.
  5. Place seam-side down on the baking sheet and repeat until all filling is used.
  6. Brush tops with more melted butter or oil and bake for 15-20 minutes until golden brown.
