  • 1/2 cup Dijon mustard
  • 1/2 cup honey
  • 1/4 cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 4 slices cooked turkey bacon, chopped
  • 2 cups shredded Colby Jack cheese
  • 2 tablespoons fresh parsley, for garnish (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a bowl, combine Dijon mustard, honey, mayonnaise, and lemon juice. Reserve 1/4 cup of the mixture.
  2. Place chicken breasts in a plastic zipper-top bag; pour in the marinade and seal. Refrigerate for at least 30 minutes or overnight.
  3. Preheat oven to 400°F (200°C).
  4. In a skillet over medium-high heat, melt butter; sauté mushrooms until browned. Set aside.
  5. In the same skillet with olive oil, sear marinated chicken until golden brown on both sides.
  6. Top chicken with sautéed mushrooms, turkey bacon, and cheese. Cover and transfer to the oven.
  7. Bake until chicken reaches an internal temperature of 165°F (about 10-15 minutes).
  8. Garnish with parsley if desired and serve with reserved marinade.
