  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt the butter and brown sugar until smooth; stir in vanilla and rolled oats.
  3. Cook on low heat for 3-4 minutes until well blended.
  4. Press half of the oat mixture into the prepared dish for the base layer.
  5. Melt peanut butter and chocolate chips in a microwave-safe bowl until smooth; pour over the base layer.
  6. Add remaining oat mixture on top and press down gently; reserve some chocolate filling for drizzling.
  7. Refrigerate for at least 2 hours until firm; drizzle with reserved chocolate before serving.
