Ingredients

  • 1 bunch green kale
  • 2 ears of corn
  • ½ cup cotija cheese
  • ¼ cup red onion
  • 12 avocados
  • Crushed tortilla chips (for garnish)
  • ½1 lime (juiced for massaging the kale)
  • Olive oil (for massaging the kale)
  • ½ cup plain Greek yogurt
  • ¼ cup fresh lime juice
  • ¼ cup cilantro (chopped)
  • 2 garlic cloves
  • ¼ tsp salt
  • ¼ tsp chipotle powder

Instructions

  1. Rinse and chop kale leaves; massage with olive oil and lime juice until softened.
  2. Boil corn for 5 minutes; cool and cut kernels off the cob.
  3. In a mixing bowl, combine massaged kale with corn kernels, red onion, cotija cheese, and diced avocado.
  4. In a separate bowl, whisk together Greek yogurt, lime juice, cilantro, minced garlic, salt, and chipotle powder to make the dressing.
  5. Drizzle dressing over the salad mixture and toss until well combined.
