Ingredients

  • Romaine lettuce
  • English cucumber
  • Yellow bell pepper (or red)
  • Grape or cherry tomatoes
  • Sweet corn (2 cobs)
  • Red onion
  • Fresh cilantro
  • Avocado
  • Olive oil
  • Sherry vinegar
  • Maple syrup (or honey)
  • Dried oregano

Instructions

  1. Microwave the corn in husks for 5 minutes. Let cool, then remove husk and kernels.
  2. In a large bowl, combine corn, chopped lettuce, cucumber, bell pepper, tomatoes, diced onion, avocado, and chopped cilantro.
  3. In a small bowl, whisk together olive oil, sherry vinegar, maple syrup (or honey), oregano, water, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss until well combined.
  5. Serve immediately for the best crunch.
