  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 1 and 1/4 cups granulated sugar
  • 3 large eggs, at room temperature
  • 1 Tablespoon pure vanilla extract
  • 1 cup buttermilk, at room temperature and divided
  • 1/2 teaspoon espresso powder
  • 1/4 cup Dutch-process cocoa powder
  • 4-ounce quality semi-sweet chocolate bar, finely chopped
  • 6 Tablespoons heavy cream

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Using a mixer, beat the softened butter and granulated sugar until light and fluffy. Add eggs one at a time along with vanilla extract.
  4. Pour in the reserved dry mixture and gradually add 3/4 cup + 2 tablespoons of buttermilk while mixing until just combined.
  5. Divide the batter; stir espresso powder and cocoa powder into half for the chocolate batter.
  6. Spread a layer of vanilla batter in the pan, alternate spoonfuls of chocolate and vanilla batters, and swirl gently.
  7. Bake for 65-75 minutes or until a toothpick comes out clean.
  8. Cool before glazing with ganache made from melted chocolate and heavy cream.
