  • 4 ounces brie cheese, thinly sliced
  • 1 cup apple juice
  • 2 tablespoons pure maple syrup
  • ½ tablespoon minced garlic
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 teaspoons fresh thyme, removed from the stems

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Carefully cut each chicken breast horizontally to create a pocket and season with salt and pepper.
  3. Layer apple slices and brie inside each chicken breast, then fold them back together.
  4. Place the stuffed chicken on the prepared baking sheet and bake for 25 to 30 minutes until nearly cooked through.
  5. In a small skillet, combine the glaze ingredients and simmer until thickened (about 12-15 minutes).
  6. Brush the glaze over the chicken and broil for an additional 10-12 minutes until fully cooked (internal temperature of 165°F).
