  • 1 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 4 tablespoons unsalted butter (cubed)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans
  • 1 cup granulated sugar

Instructions

  1. Line a baking sheet with aluminum foil and spray it with nonstick cooking spray or use a silicone mat.
  2. In a medium saucepan over medium heat, combine white sugar, brown sugar, and evaporated milk. Stir continuously until the sugar dissolves.
  3. Insert a candy thermometer and cook the mixture while stirring occasionally until it reaches 240°F (hard ball stage). Remove from heat.
  4. Drop cubes of butter onto the hot mixture without stirring; let sit for one minute. Then add toasted pecans.
  5. Stir until well combined and thickened. Quickly drop spoonfuls onto the prepared baking sheet before setting.
  6. Allow pralines to set at room temperature for about 30 minutes until fully hardened.
