  • 1 teaspoon vanilla extract (or lemon zest)

  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare an 8-inch springform pan with parchment paper at the bottom.
  2. In a clean bowl, whip the egg whites on medium speed until frothy, gradually adding 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch, and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yolk mixture to loosen it, then fold in the remaining egg whites carefully.
  5. Pour the batter into the prepared pan and place it in a baking tray filled with hot water (about one inch deep). Bake for 50–60 minutes or until golden brown on top.
  6. Let your cake cool gradually in the oven for about 15 minutes before removing.
