  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Sauté the diced onion for 2 to 3 minutes until soft; add minced garlic and cook for another 30 seconds.
  2. Stir in the rice, coating it well with the oil and aromatics for about a minute.
  3. Add chicken broth, lemon juice, lemon zest, oregano, salt, and pepper; bring to a gentle boil.
  4. Reduce heat to low and cover tightly. Simmer undisturbed for about 18 to 20 minutes until liquid is absorbed.
  5. Remove from heat; let sit covered for an additional 5 minutes before fluffing with a fork.
