  • 1/2 tsp salt
  • 3 TBSP coconut oil (melted + cooled slightly)
  • 2 eggs
  • zest of 1 lime
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/8 tsp pure vanilla extract
  • lime zest (to taste)

Instructions

  1. In a bowl, whisk together almond milk, Greek yogurt, and lime juice. Let sit for 5 minutes.
  2. Crush graham crackers into fine crumbs.
  3. In another bowl, mix flour, crushed graham cracker crumbs, sugar, baking powder, baking soda, and salt.
  4. Preheat a non-stick griddle over medium heat.
  5. Combine wet ingredients with melted coconut oil and eggs; add lime zest.
  6. Gradually fold in the dry ingredients until just combined.
  7. Pour about 1/3 cup of batter onto the griddle; cook until bubbles form before flipping.
  8. Prepare whipped cream by whipping heavy cream with powdered sugar and vanilla extract.
