  • ¼ cup bottled Key lime juice
  • 1 large egg
  • 1 egg yolk
  • 2 Tbsp salted butter, cut into pieces and chilled
  • 1 (15–16 oz.) box white cake mix (plus required ingredients per box)
  • 1 stick (½ cup) salted butter, softened to room temperature
  • 8 oz. cream cheese, softened to room temperature
  • ¼ cup bottled Key lime juice
  • 4 cups powdered sugar
  • Graham cracker crumbs
  • Thin lime slices

Instructions

  1. Prepare the Key lime curd by whisking sugar, Key lime juice, whole egg, and egg yolk in a saucepan over medium-low heat. Stir until thickened, then add chilled butter and cool.
  2. Preheat the oven to 350°F (177°C). Line cupcake pans with paper liners and prepare the white cake mix according to package instructions. Fill liners ⅔ full and bake for 18–22 minutes until done.
  3. For the frosting, beat softened butter and cream cheese until smooth. Gradually add Key lime juice and powdered sugar until fluffy.
  4. Once cooled, create a well in each cupcake center, fill with chilled Key lime curd, then frost and decorate with graham cracker crumbs and lime slices.
