- 3 pounds boneless, skinless chicken thighs
- 1 cup orange juice
- 2 tablespoons orange marmalade
- 2 tablespoons soy sauce
- 1/2 cup white sugar
- 1 large bell pepper, chopped
- 1/2 small onion, chopped
- 1/2 teaspoon ginger, minced
- 2 cloves garlic, minced
- 1–2 tablespoons avocado oil for cooking
- Salt and pepper to taste
- Prepare all ingredients by chopping vegetables and measuring out sauces.
- Preheat a cast iron skillet or Blackstone griddle over medium-high heat and add avocado oil.
- Season the chicken thighs with salt and pepper, then cook in the skillet for about 5-7 minutes on each side until golden brown.
- Add chopped vegetables and thinly sliced orange to the skillet; cook for an additional 3-5 minutes until softened.
- In a bowl, mix orange juice, marmalade, sugar, soy sauce, ginger, garlic, and red pepper flakes; pour over the chicken and vegetables.
- Reduce heat to medium-low and simmer for about 5-10 minutes until the sauce thickens slightly.
- Serve over white rice or noodles, garnished with sliced green onions.
