  • 3 pounds boneless, skinless chicken thighs
  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 2 tablespoons soy sauce
  • 1/2 cup white sugar
  • 1 large bell pepper, chopped
  • 1/2 small onion, chopped
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 12 tablespoons avocado oil for cooking
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables and measuring out sauces.
  2. Preheat a cast iron skillet or Blackstone griddle over medium-high heat and add avocado oil.
  3. Season the chicken thighs with salt and pepper, then cook in the skillet for about 5-7 minutes on each side until golden brown.
  4. Add chopped vegetables and thinly sliced orange to the skillet; cook for an additional 3-5 minutes until softened.
  5. In a bowl, mix orange juice, marmalade, sugar, soy sauce, ginger, garlic, and red pepper flakes; pour over the chicken and vegetables.
  6. Reduce heat to medium-low and simmer for about 5-10 minutes until the sauce thickens slightly.
  7. Serve over white rice or noodles, garnished with sliced green onions.
