  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14-ounce) can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. In a heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides. Remove the beef from the pot.
  2. Add onion, carrots, celery, and garlic to the pot. Cook until softened (about 5 minutes).
  3. Return the seared beef to the pot along with beef broth, crushed tomatoes, rosemary, and thyme. Stir well.
