  • 1 package phyllo dough, thawed
  • 1 1/2 cups unsalted butter, melted
  • 2 cups shelled pistachios, roughly chopped
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon, optional
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3/4 cup honey
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tbsp lemon juice

Instructions

  1. Prepare the honey syrup by simmering honey, water, sugar, and lemon juice until dissolved. Allow it to cool.
  2. Preheat your oven to 325°F (163°C) and prepare a springform pan by lining it.
  3. Layer 10-12 sheets of buttered phyllo dough in the pan, sprinkling chopped pistachios mixed with sugar in between layers.
  4. Beat cream cheese with sugar until smooth; add eggs one at a time along with vanilla and sour cream.
  5. Pour the cheesecake filling over the phyllo base and layer additional phyllo sheets on top.
  6. Bake for 60-70 minutes until set; cool at room temperature then refrigerate for at least 4 hours before serving.
