  • 450 g chicken breast
  • 1 tbsp olive oil
  • Salt & pepper
  • 2 tbsp whole grain mustard
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 red bell pepper, sliced
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • 1 cup white rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook rice in salted water until fluffy.
  2. Toss cherry tomatoes with olive oil, salt, and pepper; roast at 200°C (400°F) for 10-12 minutes.
  3. In a skillet, heat olive oil; season chicken with salt and pepper and cook until golden brown.
  4. Add honey, mustard, soy sauce, and lemon juice to the skillet; cook until thickened.
  5. Stir in sliced bell pepper; cook for another 2 minutes.
  6. Assemble by serving chicken and veggies over spinach and topped with roasted tomatoes and rice.
