  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken thighs for 3–4 minutes on each side until golden brown; set aside.
  3. In the same skillet, toast uncooked rice for 1–2 minutes.
  4. Add chicken broth and half of the BBQ honey sauce mixture; stir to combine.
  5. Return chicken to the skillet and pour remaining sauce over it; cover and simmer on low for about 15 minutes.
  6. Stir in mixed vegetables if using; cover and cook for an additional 5 minutes until rice is tender.
