  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, toast uncooked rice for 1-2 minutes.
  4. Pour in chicken broth and half of the BBQ-honey sauce mixture; stir to combine.
  5. Return chicken to the skillet and pour remaining sauce over it. Cover and simmer on low for 15 minutes.
  6. If using vegetables, add them now and cook for an additional 5 minutes until everything is tender.
  7. Let sit for 5 minutes before serving; garnish with chopped green onions if desired.
