  • 2 and 1/4 teaspoons instant or active dry yeast
  • 3 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (softened)
  • 3 cups all-purpose flour (plus more as needed)
  • 1 and 1/4 teaspoons salt
  • 3/4 cup granulated sugar (for filling)
  • 1 tablespoon ground cinnamon
  • Optional fillings: Nutella, jam, lemon curd

Instructions

  1. In a stand mixer bowl, combine warm milk, yeast, and sugar. Let sit until foamy (about 5 minutes).
  2. Mix in butter, 2 cups of flour, and salt; beat until combined. Gradually add remaining flour until soft dough forms.
  3. Knead for about 5 minutes until smooth but not sticky.
  4. Place dough in an oiled bowl, cover, and let rise for about 2 hours or until doubled.
  5. Chill the dough briefly before rolling out into rectangles and incorporating layers of butter mixed with flour through lamination.
  6. Shape strips into spirals and place in greased muffin cups. Let rise again before baking at 350°F (177°C) for 25–28 minutes.
