  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (for crumb topping)
  • 1/4 cup granulated sugar (for crumb topping)
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt (for crumb topping)
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, sugar, and salt for the crust; cut in cold butter until crumbly. Press into the prepared pan and bake for 15–18 minutes until golden.
  3. Toss sliced peaches with sugar, flour, lemon juice, and vanilla extract in another bowl.
  4. Prepare crumb topping by mixing flour, sugars, cinnamon, and salt; stir in melted butter until crumbs form.
  5. Spread peach filling over the crust, top with crumb mixture, and bake for 45–50 minutes until golden brown.
  6. Allow to cool completely before cutting into squares.
