  • 1 cup broccoli florets
  • 1 cup green beans
  • red bell pepper
  • yellow bell pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)
  • Pinch of salt

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and fully cooked through (about 5-7 minutes). Remove and set aside.
  2. In the same pan, add another tablespoon of oil. Sauté minced garlic for 30 seconds until fragrant. Add broccoli, green beans, red bell pepper, and yellow bell pepper. Stir-fry for 3-4 minutes until tender-crisp.
  3. Return the chicken to the pan and add soy sauce, honey (or maple syrup), salt, and pepper. Stir well for 2 minutes to combine.
  4. Serve over warm mixed rice.
