  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese

  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, sauté the chopped onion and minced garlic in olive oil until fragrant (about 2 minutes).
  3. Add the ground turkey to the skillet and cook until browned (about 5-6 minutes).
  4. Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper. Simmer for 3-4 minutes.
  5. Layer half of the sliced zucchini in the prepared baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layers.
  6. Bake uncovered for 30-35 minutes until bubbly and golden on top. Let cool for 5 minutes before serving.
