  • 2 ripe avocados
  • 1 ½ cups corn (fresh, frozen, or canned)
  • ½ cup mayo or Greek yogurt
  • Lime juice (from 1 ½ limes)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp chili powder
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice (for salsa)
  • Cooked rice, quinoa, or cauliflower rice

Instructions

  1. Marinate the shrimp with olive oil, spices, lime juice, salt, and pepper; let sit for 15–20 minutes.
  2. Prepare corn salsa by mixing corn, diced bell pepper, green onions, cilantro, lime juice, and salt; chill.
  3. Mash avocados with lime juice, salt, and pepper until creamy.
  4. Make the creamy sauce by whisking mayo (or yogurt), lime juice, spices, and salt together.
  5. Grill the shrimp for about 2–3 minutes per side until pink.
  6. Assemble the bowl with rice/quinoa as the base topped with corn salsa, avocado mash, grilled shrimp, and drizzle with creamy sauce.
