  • 2 salmon fillets
  • 2 cups baby potatoes
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 cup shredded mozzarella or cheese blend
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  2. While the potatoes are roasting, place trimmed asparagus on another baking sheet, drizzle with olive oil, season with salt and pepper, and top with shredded cheese. Bake for the last 10 minutes alongside the potatoes until bubbly.
  3. Season salmon fillets with paprika, garlic powder, salt, and pepper. Heat a grill pan over medium-high heat with olive oil. Grill each fillet for about 4-5 minutes per side until golden and cooked through.
  4. Serve grilled salmon alongside roasted garlic potatoes and cheesy asparagus.
